This recipe is sooo simple to make. It literally only takes a couple minutes but the pay off is HUGELY delicious. It’s vegetarian, made with whole food ingredients, and loaded with protein, fiber, and nutrients. 🌮

Black beans are a great source of folate, copper, iron, and so much more. Mushrooms are amazing for your immune system. Eat up!

Ingredients:

  • 8 oz organic white button mushrooms, sliced (or about 6 large mushrooms)
  • 2 cups, or about 1 can if using canned, organic black beans, drained
  • 2 TBSP olive oil or avocado oil
  • 1 shallot, sliced
  • 2 cloves of garlic, minced
  • 6 tortillas (I made mine from scratch using cassava flour and the recipe on the back of their bag)
  • 1/4 tsp sea salt or pink Himalayan salt, or to taste
  • organic ground black pepper to taste
  • organic garlic powder, to taste

Instructions:

  1. heat oil in cast iron skillet
  2. add shallot and garlic, cook until lightly browned
  3. add mushrooms, cook for a couple minutes stirring continuously
  4. add black beans, and seasonings, stirring alltogether
  5. once heated, serve into tortillas
  6. top with romaine lettuce, Siggi’s plain yogurt in place of sour cream, fresh cilantro, and avocado. Serve with rice on the side.
