It’s been so long since I made a blog post! This is the second time I’ve made this salad, and each time I make it at night with the intentions of having some leftover the next day to take pictures of in natural sunlight… and each time, ME AND HUBS EAT IT ALL in one sitting.

It’s so good. So I’m going to share, without pretty daylight picture, BUT with a delicious simple and healthy recipe. (Also questionably “loose” measurements)

I just LOVE the crisp freshness of the kohlrabi mixed with the spinach and this dressing!

Ingredients:

1 white kohlrabi, peeled and spiralized

Fresh spinach

Pears and/or apples, spiralized (leave on peel for extra nutrients!)

1 TBSP olive oil

1 TBSP apple cider vinegar

1 tsp raw local honey

1 tsp mustard

1 Finely chopped shallot

Sea salt and pepper, to taste

Directions:

  1. Combine spiralized kohlrabi, pears, Apple (optional), and spinach in large bowl and toss together
  2. In separate small container (I like to reuse an old jar and then shake it up to mix), combine ingredients for dressing: olive oil, acv, honey, mustard, shallots, and sea salt & pepper
  3. Add dressing to salad, serve and enjoy
