Farmers Market Ingredients:

  • Purple potatoes (or any kind of potatoes)
  • Sage
  • Honey
  • Cherry tomatoes
  • Swiss chard
  • Shallots


Other ingredients:

  • Salmon (sometimes also available at farmers markets! Just not where mine came from in this instance)
  • Pink Himalayan salt or sea salt
  • Ground black pepper
  • Chosen Foods Avocado oil 
  • Pine nuts


Directions:

Potatoes:

  1. Slice into approx 1-2 inch thick pieces
  2. Line pan with parchment paper
  3. Combine avocado oil, potatoes & salt
  4. Bake at 400F for 45 minutes to 1 hour, stirring every 15 minutes


Salmon:

  1. Line pan with parchment paper & light layer of avocado oil (I used the spray kind to get a very light coat)
  2. Drizzle honey on salmon, top loosely with sage
  3. Bake at 400F for 15 – 20 minutes


Swiss Chard:

  1. Heat avocado oil on cast iron skillet
  2. Slice shallots and sauté for a couple minutes, until translucent. 
  3. Cut Swiss chard into 1 inch thick slices, add to cast iron with shallots and sauté until wilted (add water if needs more liquid to move along)
  4. Halve the cherry tomatoes and add to cast iron, sauté until slightly wilted but still retaining vibrant red color
  5. Add in pine nuts at the very end of cooking
  6. Sprinkle with salt & pepper intermittently to taste!
