I went back and forth on whether to call these “energy bites” or “bliss balls” for quite some time, because they are 100% BOTH. Decided on a hybrid name, “energy bliss balls.”
These energy bliss balls are mouth watering, and you won’t even notice they’re also jam packed with fiber, protein, healthy fats, superfoods, adaptogens, and other minerals and nutrients to keep you feeling full and performing at your best!
After recently learning that Goji berries are an adaptogen, commonly referred to as Lycium, I’m all about incorporating them more often. Lycium’s properties are “anti-inflammatory, antioxidant, chemoprotective, hepatoprotective, immune tonic, lowers blood sugar levels, and nutritive.” Great for liver, kidneys, and blood, among many other things!
Anyways, these energy bliss balls are sooo good, you guys. You need to try them!
*Edit*: Updated this post on 3/14/17 (because pi day and snow day experiments) to note that this mixture makes an EXCELLENT no-bake granola, and no-bake pie crust!!!! If you’re like me and tend to start projects and move on to the next one before finishing the last, this is great news for you as there are so many delicious uses for this mixture if you want to skip the last step of rolling into balls!
1 cup pulsed almonds (raw, unsalted)
1/2 cup pulsed walnuts (raw, unsalted)
1 cup oats
4 tablespoons Artisana Organics Coconut butter
10 medjool dates (soaked in filtered water for 30 mins – 2 hours and then pureed)
1/4 cup hemp hearts
1/4 cup ground flax seeds
1/2 cup Goji berries
1/2 cup shredded coconut
1/2 teaspoon pink Himalayan salt
Combine dry ingredients in large bowl (almonds, walnuts, oats, pink salt, hemp hearts, ground flax seeds, goji berries, and shredded coconut)
Add medjool dates and coconut butter to dry mixture
stir all together until evenly combined
roll into balls – any size you want
