This is a vegan/vegetarian twist on my mom’s famous chicken & rice dish. This variation is equally simple to make, but full of much more plant-based goodness, superfoods, and anti-inflammatory turmeric.

I will definitely be making this again in the future and making upgrades to this recipe. But wanted to share as is now because it is quite delicious and sooo simple to make.

I used pre-cooked rice, which made it more of a soup-like consistency since a lot of the liquid did not get absorbed. When I make the recipe again, I will use uncooked rice. It’s also very easy to pour out some of the liquid after it’s cooked, or not use as much, if you want it less liquidy and want to use pre-cooked rice. Using uncooked rice will absorb much more of the liquid during cooking.

First, here’s a bit about some of the goodness in this recipe:

. 🔶🔸Turmeric: turmeric is a well-known anti-inflammatory that can help with numerous ailments. This recipe is packed with turmeric. Make sure to add black pepper whenever you use turmeric as this helps to enhance the bioavailability of the turmeric.

Ingredients:

5 cups cooked brown rice (should be able to replace with 1 cup uncooked rice – but I haven’t tried it yet to verify)

5 cups chopped kale

1 large sweet potato, cubed

1/2 bag frozen organic mushrooms (I used half bag because that’s all I had. Otherwise I totally would have used a whole bad. You can also use sliced fresh mushrooms if you have them available)

8 oz dried black eyed peas

2 cans full fat organic coconut milk

2 (coconut milk) cans filled with water

pink Himalyan salt

1 tbsp ground organic turmeric

1 tsp coriander powder

ground black pepper

 

 

Directions:

Preheat oven to 375F

Whisk together the coconut milk, water, and spices

combine all other ingredients together in a casserole dish

Pour the liquid over the dish and toss to combine

Bake for 1 hour

Remove, serve, and enjoy 🙂

Pro tip (for non-vegans): top with a fried egg 🍳 for added deliciousness
