2 sweet potatoes (you might notice my pictures don’t show the typical orange sweet potato — that is because I used one Japanese sweet potato and one white sweet potato! You can use any kind! I found mine at the local farmers market)

Vegan bacon (any brand, or you can substitute regular bacon)

1 Egg

1 cup Pecans

1 TBS ghee

Splash of Milk (I used homemade cashew milk because I had some soaked cashews on hand and just blended it up really quick. You can use any kind of milk)

Splash of Pure Maple Syrup

Splash of Jim Beam Bourbon

Splash of Vanilla Extract




Wash sweet potatoes

Poke holes in sweet potatoes

Bake at 400F for about 30 minutes

Remove from oven and let cool

Peel sweet potatoes

Place in mixer

Cook bacon on pan

Remove from heat

Cut bacon into pieces

Add milk, ghee, maple syrup, bourbon, vanilla extract, and bacon pieces to sweet potato mixture and mix.

Place in oven-safe dish

Top with crumbled pecans

Bake at 350F for 30 minutes

Remove from heat, let cool, serve & enjoy 🙂
