Farmers Market Haul with some of the main ingredients used in this recipe

These colorful lettuce wraps are easy peasy to put together. Though like all super delicious foods, they are slightly messy to eat. Please enjoy this healthy rendition of eating the rainbow. 🙂

My recipe is vegetarian but you can substitute actual ground beef for the vegan kind I use. Just make sure it’s organic grass-fed beef if you want to keep the meal healthy.

This recipe is also an easy way to use up any produce in your fridge as you can add in/substitute almost anything and it will still be delicious and nutritious.

Always try to buy  your produce from local farmers if you can! It will taste way better that way and it’s always great to support your local community.

Ingredients:

Lettuce wrap:

Radicchio (from local farmers market)

Stuffing:

Extra Virgin Olive Oil

Plant-based ground beef (OR organic grass-fed beef to make it carnivorous) (I used a plant-based brand called Beyond Meat that I bought at Whole Foods. It is pea-protein based which is pretty awesome!)

Diced sweet peppers of various colors (from local farmers market)

Diced apples (from local farmers market)

Diced tomatoes (Picked up organic tomatoes from Whole Foods)

Chopped purple cauliflower (from local farmers market)

Pink Himalayan Sea Salt, pepper, coriander powder, garlic powder, onion powder

Toppings:

Siggi’s Icelandic Style Skyr plain yogurt (any thick yogurt or sour cream will do! Siggi’s skyr yogurt is my personal favorite because it is SO ridiculously thick you’ll have a hard time believing it is yogurt, and the ingredients are SO clean–only pasteurized skim milk and live active cultures)

Sliced Avocado (Picked up organic avocados from Whole Foods)

Crumbled Feta cheese

 

Directions:

Wash and prepare all produce

Heat EVOO in large sauce pan

Add all stuffing ingredients to sauce pan

Heat to desired consistency

Serve
